Chardonnay
To accomplish our ideal Chardonnay style, we gently press whole clusters, ferment the wine in French oak barrels with our proprietary yeast, frequently stir the lees and allow the wine to mature for 18 months in barrel. In some blends, our winemaker may use stainless steel fermentation to ensure freshness and vibrant fruit flavors. In our continuing commitment to the perfect match of varietal and climate, Ponzi Chardonnay is made with Dijon clones, which are ideally suited to the long, cool growing season in the Willamette Valley.
The barrel select Chardonnay blends – Willamette Valley and Reserve – are unfiltered, unfined, and aged in bottle eight months before release.
